Tavel is the Rhône appellation that makes nothing but rosé, and makes it dark, dry, and serious. Domaine les Hautes Roches is an estate cuvée from Cellier des Chartreux in the Gard, blending Grenache, Syrah, and Carignan with a splash of white Clairette. This is rosé with a spine: deeper color, more body, and enough grip to hold the dinner table all year. If Provence pink is a beach read, Tavel is the good novel.

Pronounced, clear pink. Rich red fruit on the nose: cherry, strawberry, blackcurrant, and blackberry with a caramel edge. Full bodied and harmonious, fruity with pleasant minerality and a dry finish.

Grilled chicken with herbes de Provence, charcuterie, lamb kebabs, garlicky roast vegetables, bouillabaisse if you're showing off.
