Paso Robles fruit from Bob and Jim Varner, the brothers behind Varner Wine's serious, cellar-worthy Santa Cruz Mountains Chardonnay and Pinot Noir. Foxglove is their value play, built for weeknight drinking instead of the cellar. The 2021 is 94% Cabernet Sauvignon with a splash of Petit Verdot and Cabernet Franc, fermented almost entirely in stainless steel so the fruit stays forward and the tannins stay soft. No oak to hide behind, just ripe Paso Cab doing its job. A great burger-and-pizza wine.
Plum, blackcurrant, cherry and violet with a streak of blue flower. Juicy and forward on the palate, fine tannin and bright acidity keep it light on its feet for a Paso Cab. Clean, fruit-driven finish.
