Henri Champliau makes this pink pét-nat from 100% Gamay in Beaujolais, using the ancestral method: one fermentation, bottled before it finishes, so the bubbles happen naturally in the bottle. It comes out demi-sec, meaning real sweetness balanced against real fizz, and low in alcohol. Playful, pink, unserious in the best way. This is the bottle for brunch, a bachelorette party, or anyone who swears they don't like Champagne but hasn't tried this yet.

Raspberry and cherry candy on the nose, with fine, persistent bubbles. Sweet strawberry up front, but the fizz brings real freshness on the swallow. Light, gentle, easy finish.

Pour it at brunch with pastry, or alongside spicy takeout. The sweetness handles heat well.

Made in Beaujolais from 100% Gamay using the méthode ancestrale, a single-fermentation process that leaves natural sweetness and bubbles in the bottle without any added dosage or second fermentation.
