Pares Balta - Pink Cava - NV

Parés Baltà has farmed the Penedès since 1790 and is now run by the third generation of the Cusiné family, certified organic since 2002 and biodynamic since 2012. Pink Cava blends Garnacha, Parellada and Macabeo, ages 18 months on its lees in underground cellars, and is bottled at zero dosage using the traditional method. There's real structure behind the pretty color. Reach for it on a spring afternoon, with a cheese board, or anywhere a rosé sparkler needs to work harder than usual.

Pale rosé color, red fruit and light floral aromas. Crisp, fresh palate of strawberry and raspberry, smooth bubbles, and a dry, zero-dosage finish.

Zero dosage means real dryness, so it cuts through spicy food and crudo better than most pink fizz. Try it with spicy tuna or a plate of jamón.

Parés Baltà is run by the third generation of the Cusiné family, Joan and Josep, with their wives Elena Jiménez and Marta Casas sharing winemaking duties. The estate farms 176 hectares across five sites in the Penedès organically and biodynamically, using sheep grazing and beehives instead of chemical inputs.
