The name is literal. When Tom and Beverly Porter dug their 17,000-square-foot underground winery into Coombsville, a sandstone slab fell from the cave ceiling carrying sandpiper footprints more than five million years old. This rosé remembers the birds. The 2023 is 74 percent Pinot Noir with Grenache and Syrah, whole-cluster pressed and fermented in stainless steel, 260 cases total. Deep salmon, dry and bright. Napa rosé with an actual fossil record.

Deep salmon color. Ruby grapefruit, citrus blossom, rose petal, lemongrass and flint aromas. Strawberry, raspberry, white peach and pineapple guava flavors, bright acidity, bone-dry finish.

Chilled shrimp, a Niçoise salad, salty potato chips on the patio.

Tom and Beverly Porter founded the estate in 2005. The winery runs entirely underground in caves that hold 57 degrees year-round, beneath vineyards planted to Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Petit Verdot and Malbec.
