Borges has been shipping Port since 1884, when brothers António and Francisco started the house. This is the house tawny: Touriga Franca, Touriga Nacional, Tinta Barroca, Tinto Cão and Tinta Roriz off schist terraces in the Douro, fortified to nineteen percent and aged five to seven years in wooden casks. A hundred and twelve grams of sugar, so it is properly sweet. Keep one open in the fridge.

Blondish in the glass. Quince and jam aromas sitting on vanilla from the wood. Soft attack, sweet and persistent, and the finish shows its years in cask with more jammy fruit.

Drink it as an aperitif, or with liver pâté, light cheeses, fresh fruit and anything from the dessert case.

Fruit comes off traditional terraced vines on schist in the demarcated Douro, thirty to forty years old on average, cropped at twenty-five hectoliters a hectare. Three to four days on skins, then grape brandy at seventy-seven percent stops the ferment.
