M. Antonio de la Riva was a storied Jerez bodega dating to the 1700s, brought back to life by Ramiro Ibanez and Willy Perez, the two winemakers driving the modern sherry revival. This Manzanilla Fina is 100% Palomino from the Miraflores Baja pago outside Sanlucar de Barrameda, close enough to the Atlantic to taste it. Aged under flor for an average of 3.5 years in a small solera, bottled unfiltered once a year. Bone dry, saline, and one of the most serious aperitifs in the shop.
Pale gold. Yellow apple, nougat, olive brine and a whiff of aged Champagne. Pure salty minerality, lemon and grapefruit pith, steely acidity, sea salt hanging on through a long finish.
Fried anchovies, jamon, boquerones, oysters on the half shell, salted almonds. Serve it cold and finish the bottle fast.
Palomino from the Casilla Verde estate in the Miraflores Baja pago near the ocean. Fermented in steel on the lees, then biologically aged under flor in a traditional 1/12 solera. One saca per year, bottled unfiltered at 15%.
