The Chocolatier is Lambert Estate's Barossa party trick: a genuine Australian tawny, predominantly Grenache, Shiraz, and Gordo with small amounts of Zinfandel, Mataro, Cabernet, and Chardonnay, aged a minimum of five years in old oak casks, some over a century old, then steeped in a blend of 100% dark chocolate. Sounds like a gimmick. Drinks like dessert incarnate. Vegan and dairy free despite the chocolate. Pour it small, serve it cool, end the night on applause.
Deep amber-brown with golden highlights. Caramelized nuts, dried fig, vanilla, and warm baking spice, a whiff of banana bread. Silky, sweet, and rich with a long cocoa-laced finish.
Pour it over vanilla ice cream, set it beside a brownie, or match it with salted caramel anything.
Lambert Estate is a family winery in Angaston, Barossa Valley. The tawny base is made the traditional way, fortified with neutral spirit and left to mellow in old casks before it ever meets the chocolate.
