Signature is Chappellet's flagship Cabernet, made every year since the winery's early days on Pritchard Hill above Lake Hennessey. The 2019 leans on mountain fruit backed by Petit Verdot, Malbec and Merlot for structure and lift. It's built for the long haul but drinks well young, which is the whole point of the Signature program: a benchmark hillside Napa Cab you don't have to wait a decade to enjoy. Good for a steak dinner or the cellar, your call. Cassis, plum preserves, tobacco leaf and cedar chest on the nose; medium to full-bodied with a firm, grainy tannin structure and a lifted finish carrying baking spice and vanilla from French oak.
