Tollot-Beaut has farmed Chorey-lès-Beaune since the 1880s and began bottling under its own label in 1921, decades before that was normal in Burgundy. This is the top of the family's range: Grand Cru Pinot Noir from Bressandes, an east-facing, limestone-rich climat on the hill of Corton, raised in 50 percent new oak. Only about 300 cases exist. The 2019 vintage gave it dark fruit and serious structure. Built for the cellar or a long decant. The special-occasion Burgundy.
Black cherry, black currant, tar and wet stone. Tightly wound and racy, medium-bodied, with supple tannins and fine acidity. Fruit, mineral and spice carry a long finish.
Classic matches for Pinot Noir: Salmon, roast duck, mushroom risotto, a charcuterie board that means business.
A fifth-generation family domaine run by cousins Nathalie, Jean-Paul and Olivier Tollot, with 24 hectares across Chorey-lès-Beaune, Savigny, Beaune and Aloxe-Corton. Among the first Côte d'Or estates to bottle their own wine, starting in 1921.
