Ghost Block - Cabernet Sauvignon - 2021

Ghost Block's 2021 Estate Cabernet Sauvignon comes from winemaker Kristi Koford's family-owned, organically farmed Rock Cairn vineyard in Oakville, blended with fruit from the Ghost Block vineyard in Yountville. It's 96% Cabernet Sauvignon with small amounts of Malbec and Petit Verdot, aged 24 months in about 60% new French oak. Deep, gravelly loam and a western exposure push these vines to ripen last each harvest, concentrating the fruit.
Blackcurrant, ripe plum and blackberry aromas with cedar, vanilla, dark chocolate and black peppercorn. Velvety texture, silky tannins, refreshing acidity, full-bodied and built to age.
The producer suggests grilled lamb chops; Robert Parker's Wine Advocate calls it built for steak off the grill.
Fruit is 77% Rock Cairn Vineyard in Oakville and 23% Ghost Block Vineyard in Yountville, both organically farmed on deep gravelly loam with a western exposure. Five blocks of Cabernet Sauvignon ranging from 5 to 35 years old are farmed and blended separately. Alcohol 14.5%, pH 3.9.
