Henriot's founding cuvée, born in 1808 when Apolline Henriot decided a single year could never tell her terroir's whole story and started banking reserve wines. Brut Souverain blends 29 crus, roughly 45% Pinot Noir, 40% Chardonnay and 15% Meunier, with 30 to 50% reserve wines in the mix, at least three years of aging and a dosage under 7 grams. Real house Champagne with real depth, priced so you can open it because it's Thursday.

Cake and fresh citrus on the nose, smoke turning to pure chalk, then a basket of stone fruit and red berries. Ample, round and straightforward on the palate with long, persistent freshness.
