Iron + Sand takes its name from Paso Robles' historic Iron Spring and Sand Spring, the hot springs that made the town California's first resort destination. The 2021 Cabernet Sauvignon is 86% Cabernet Sauvignon, 11% Petit Verdot and 3% Petite Sirah, sourced from two sustainably farmed vineyards in the El Pomar and San Miguel District AVAs and aged in neutral oak so the Paso terroir leads. It runs 14.1% ABV and earned 91 points from both James Suckling and Vinous.
Dense purple color; aromas of dark red fruit, blueberry, black cherry, cassis and cola dusted with baking spice. Velvety palate of black cherry and blackberry, coffee, mocha and vanilla, lifted by lively acidity and fine tannins into a long, mouthwatering finish.
The winery's own match: Santa Maria-style tri-tip with salsa and pinquito beans, grilled French bread and a crisp green salad.
Sourced from two sustainably farmed vineyards within the Paso Robles AVA, where iron trellising supports the vines and well-drained, alluvial sandy soils suit Cabernet Sauvignon — the source of the winery's name.
