Jax Block 3 - Cabernet Sauvignon - 2018

Jax is a family operation in Calistoga, David Jackson planted the estate in the 1990s, his daughter Kimberly took over running the business in 2003, and Kirk Venge, the same winemaker behind his own cult label, has run the cellar the whole time. Block 3 comes from the best rows on the estate, clone 337 on 101-14 rootstock, hand-picked and cold-soaked, then aged 28 months in new French oak. Wine Enthusiast gave it 94 points. Big, dense Calistoga Cab built for the long haul.
Deep garnet-purple. Warm black cherry, cassis and preserved plum with chocolate box, cedar chest, tobacco leaf and iron ore. Full-bodied and concentrated, firm grainy tannins, long multilayered finish with a clove-and-nutmeg edge.
Classic matches for Cabernet Sauvignon: Ribeye off the grill, lamb chops, aged cheddar, a rainy night and a good movie.
