Les Volets is a Pinot Noir from Maison Boutinot, made by winemaker Guillaume Létang in the Haute Vallée de l'Aude, in the foothills of the Pyrenees rather than Burgundy — the name means 'shutters,' after the ones on every house in the region. Altitude and cool Atlantic winds slow ripening here, giving the fruit real complexity for the price. It's unoaked to keep the varietal character pure, HVE3-certified for sustainable farming, and vegan. A good bottle for Burgundian style without the Burgundian price tag.

Bright ruby red with upfront raspberry aromas and a savory, leesy undertone. Fleshy red fruit on the palate, fine tannins, juicy acidity — serious structure for the price.

Herby sausage casserole, grilled lamb, or pea and ham soup — don't serve it too warm.

Boutinot sources this from the Haute Vallée de l'Aude, a cooler, higher-altitude corner of the Roussillon/Languedoc in the Pyrenees foothills, where Atlantic winds and a wide diurnal range mimic more northern growing conditions. Vines are farmed sustainably under HVE3 certification.
