Palmaz Vineyards Cabernet Sauvignon 2018 750ml

The Palmaz family carved an 18-story gravity-flow winery into Mount George so their Cabernet never touches a pump, from crush all the way to bottle. Nobody else in Napa goes that far. The 2018 comes from a textbook growing season and shows it: blackberry and huckleberry depth, currant and cassis on the palate, bright acidity holding everything in line. It drinks more like a well-bred Bordeaux than a Napa bruiser. Serious wine from serious people, and it ages beautifully.

Blackberry and huckleberry on the nose with vanilla, cocoa and peppercorn. Currant, cassis and dark chocolate on the palate, bright acidity, round mid-palate, well-integrated tannins. Long finish with a fine dusty edge.

Prime rib with horseradish cream, or short ribs braised until they give up.

The Palmaz estate sits on Mount George at Napa's southeastern edge. Its 100,000-square-foot subterranean winery, the largest wine cave in Napa Valley, took seven years to build and moves wine entirely by gravity from grape to bottle.
