Seven Hills Winery is one of the founding estates of Walla Walla Valley, started in 1988 by fourth-generation farmer Casey McClellan and his wife Vicky as the appellation's fifth winery. Casey helped his father plant the original Seven Hills Vineyard back in 1982; that vineyard was later named one of the 'Ten Great Vineyards of the World' by Wine & Spirits Magazine. This Merlot carries that pedigree: real Washington structure, not a fruit bomb. Drinks well now and should hold for another five years.

Ruby colored, with cherry, mountain raspberry, dark chocolate and herb aromas; medium body, black cherry, raspberry and mocha flavors, velvety tannins, cocoa powder and baking spice on the dry, dusty finish.

Classic matches for Merlot: Roast chicken, pork tenderloin, mushroom anything, herbed potatoes.

Norm McKibben bought the original 20-acre block in 1994 and, with Gary Figgins, Marty Clubb and Bob Rupar, expanded Seven Hills Vineyard to over 200 acres by the late 1990s.
