Shabo Limited Qvevri Saparavi Merlot 2020 750ml

Shabo has made wine on the Dniester estuary near Odesa since Swiss settlers founded the village winery in 1822, and the team has kept making it through wartime. For this limited release they buried Georgian clay qvevri in the ground and aged a Saperavi-Merlot blend inside them, about 1,700 bottles a year. Inky Saperavi punch, plush aromatic Merlot flesh, eight-thousand-year-old technique. One of the few Ukrainian wines on any shelf in Virginia, and it earns the spot on the wine alone.

Blackberry compote and black raspberry liqueur with tart cherry and orange peel, smoldering cigar and graphite beneath. Concentrated, juicy and structured, long dark finish.

Grilled lamb, beef stewed with prunes, hard sheep's cheeses, anything cooked over charcoal.

Shabo farms along Odesa's temperate Black Sea coastline in southern Ukraine. The Iukuridze family brought 30 qvevri from Georgia, drawing on the father's Georgian winemaking experience, and the winery keeps winning international competitions while supporting relief efforts at home.
