Vigneti Zabù farms clay hillsides above Lake Arancio in Sambuca di Sicilia, part of the Fantini Group that Valentino Sciotti built into a southern Italy powerhouse starting in 1994. Il Passo is Nerello Mascalese given the appassimento treatment: grapes dry for 15 to 20 days after harvest, shedding a fifth of their weight before pressing, then spend six months in French and American oak. That extra step turns a grape known for light, savory Etna reds into something dense and warm. Pour it with grilled sausage, not delicate fish.
Bright ruby color. Red berry, cherry, dried flowers, baking spice, chocolate and coffee on the nose. Full-bodied and warm, soft-textured, with red fruit carrying through a long finish touched by vanilla and oak spice.

Vigneti Zabù belongs to the Fantini Group, founded by Valentino Sciotti in 1994 to spotlight southern Italian wine. The estate planted its own vines in 2005 on clay soils around Lake Arancio in Sambuca di Sicilia, at about 400 meters, where the lake tempers Sicily's summer heat.
