Chateau Les Justices - Sauternes - 2019 - 375ml

Château Les Justices is unclassified in the 1855 Sauternes ranking, but it consistently drinks above that status. The 2019 blends 85% Sémillon with 10% Sauvignon Blanc and 5% Muscadelle, botrytis-affected fruit picked in passes through the vineyard and aged two years in tank before bottling at a restrained 13% ABV. Expect the real thing: honeyed richness balanced by real acidity, not just sugar. This 375ml is built for two people and a cheese course, not a whole dinner party.

Golden in the glass. Candied citrus zest, dried apricot and currant on the nose, with pineapple, peach and cream underneath. Rich and honeyed on the palate, but balanced, with a long, sweet-tart finish.

Les Justices sits outside the 1855 classification but follows the same botrytis-driven method as its classified neighbors: Sémillon-dominant fruit picked in selective passes for noble rot, then aged two years in tank before release.
