Bila-Haut is the southern French project of Michel Chapoutier, the famous Rhône Valley producer, centered on an old farm villa built high into the mountain slopes of the Roussillon. His rosé travels under the IGP Pays d'Oc banner: a blend of Grenache, Cinsault and Syrah in a dry, pale, mineral-driven style. Cinsault gives it pretty red fruit and florals. Grenache brings crisp citrus snap. Serious winemaking in a picnic bottle, from a name you can trust.
Strawberry, watermelon and a touch of rhubarb with light herbal notes. Dry and energetic on the palate, red fruit set against chalky limestone minerality, bright cleansing acidity, a clean citrus-tinged finish.
Niçoise salad, grilled shrimp, goat cheese, garlicky aioli. A warm-afternoon wine that still behaves at the dinner table.
Domaine de Bila-Haut is Chapoutier's Roussillon estate, named for an old farm villa set among old mountain vineyards. The rosé is drawn from southern French fruit bottled under IGP Pays d'Oc; the 2018 blend ran 50 percent Grenache, 35 Cinsault, 15 Syrah.
